Ingredients
2 cups all-purpose flour
1 teaspoon baking powder
½ teaspoon baking soda
½ teaspoon salt
1 teaspoon ground cinnamon
½ teaspoon ground nutmeg
¼ teaspoon ground cloves
½ cup unsalted butter, softened
1 cup granulated sugar
2 large eggs
1 teaspoon vanilla extract
½ cup sour cream
2 cups peeled and chopped apples (about 2 medium apples)
½ cup chopped walnuts or pecans (optional) For the Spiced Glaze:
1 cup powdered sugar
½ teaspoon ground cinnamon
¼ teaspoon ground nutmeg
2-3 tablespoons milk
Instructions
Preheat your oven to 350°F (175°C). Grease and flour a 9×9 inch baking pan, or line it with parchment paper.
In a medium bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, nutmeg, and cloves until well combined. Set aside.
In a large mixing bowl, cream the softened butter and granulated sugar until light and fluffy, about 2-3 minutes.
Beat in the eggs, one at a time, until well incorporated. Then, mix in the vanilla extract.
Gradually add the dry ingredients to the wet ingredients, alternating with the sour cream, beginning and ending with the dry ingredients. Mix until just combined, being careful not to overmix.
Gently fold in the chopped apples, and chopped nuts, if using.
Pour the batter into the prepared baking pan and spread it out evenly.
Bake in the oven for 40-45 minutes or until a toothpick inserted into the center comes clean.
While the cake is baking, prepare the spiced glaze by whisking together the powdered sugar, cinnamon, nutmeg, and enough milk to achieve your desired consistency. Set aside.
Once the cake bakes, remove it from the oven and let it cool in the pan for about 10 minutes.
After 10 minutes, transfer the cake to a wire rack to cool completely.
Once the cake has cooled, drizzle the spiced glaze over the top.
