Ingredients
16 oz package of frozen cauliflower, thawed
16 oz package frozen broccoli, thawed.
8 oz canned sliced water chestnuts, drained.
8 oz carrots
10.5 oz can cream of mushroom soup.
1 cup mayonnaise
1 yellow onion, diced.
2 eggs, beaten.
1 tbsp salt
Dash of pepper
8 oz grated cheddar cheese
8 oz grated mozzarella cheese
Instructions
Step 1: In the mixing bowl, combine the soup, eggs, onions, mayonnaise, salt, and pepper.
Step 2: In a greased 9 x13 glass pan, put half of the broccoli, cauliflower, carrots, and water chestnuts.
Step 3: Pour half of the soup mixture over the cauliflower mixture.
Step 4: Sprinkle half of the mozzarella and cheddar cheese on top of the mixture and repeat on another layer.
Step 5: Bake in the oven at 350 degrees for an hour to an hour and fifteen minutes or until the cheese is golden brown, and the vegetables are cooked.
Step 6: If the cheese starts to brown before cooking time is completed, cover it with foil and continue baking.
