Ingredients
Serves 2
4 slices sourdough or multigrain bread, toasted
2 ripe avocados
1 tbsp fresh lemon juice
Salt and black pepper, to taste
½ tsp chilli flakes (optional)
1 cup cherry tomatoes, halved
1 tbsp olive oil
½ tsp dried oregano
⅓ cup crumbled feta cheese
Fresh basil leaves, for garnish
Drizzle of olive oil or balsamic glaze
Instructions
Preheat oven to 400°F (200°C). Toss cherry tomatoes with olive oil, oregano, salt, and pepper. Apply on a baking sheet and roast for 15 minutes, until soft and caramelized.
In a bowl, mash avocados with lemon juice, salt, pepper, and chilli flakes (if using) until creamy but slightly chunky.
Spread mashed avocado evenly over toasted bread. Top with roasted tomatoes and sprinkle with feta.
Drizzle with olive oil or balsamic glaze and garnish with fresh basil leaves. Serve warm.
