Rhubarb Lemonade Drink

Unique in its own right, this drink is made out of fresh lemonade and rhubarb. Perfect for welcoming in the warm weather makes it the ultimate drink for spring. After all, it is cool, refreshing, and full of citrus notes.

Ingredients

Rhubarb Nectar

1 lb. rhubarb (approx. 4 cups)
2 cups water

1 1/3 cups granulated sugar

Lemonade

2 cups of fresh lemon juice

½ cup fresh orange juice

Instructions
Bring the rhubarb and water to a simmer over medium-high heat. Simmer until the rhubarb breaks down for about 5-10 minutes.

Using a fresh sieve, strain out the rhubarb solids.

Allow it to drain for a while, then gently squeeze it with a spatula or spoon to release all the juice.

Add sugar to warm nectar.

Stir until the sugar has dissolved, and place it in the refrigerator to chill.

To make lemonade, pour the chilled rhubarb nectar, lemon, and orange juice into a pitcher.

Taste to adjust the sugar if needed.

Pour over iced-filled glasses and enjoy!
