Ingredients:
12 small, peeled shrimp
2 cloves of minced garlic
1 tablespoon of olive oil
1 tablespoon of chili powder
½ teaspoon of cumin
4 small corn or flour tortillas
Salt and pepper as needed.
Topping ingredients:
Tomatoes, lettuce, onions, lime, avocado, and cilantro
Pineapple salsa:
1 cup of pineapple
½ cup of red onions
½ tablespoons of chopped fresh cilantro or to taste
½ cup of bell pepper
½ cup of lime juice
Salt to taste
Instructions:
Heat olive oil in a bowl on medium heat.
Add minced garlic and cook for 20 seconds until aromatic.
Add shrimp, chili powder, cumin, salt, and pepper to the heated olive oil bowl until evenly coated.
Cook shrimp for 3-4 minutes on each side.
In a separate bowl, mix the pineapple, chopped red onions, bell pepper, lime juice, chopped cilantro, and salt, and set aside to allow the flavors to be mixed while you prepare the shrimp.
Warm the tortillas in a frying pan, or microwave for 15-20 seconds.
Add the cooked shrimp and the pineapple salsa on top of the tortillas.
Garnish with tomatoes, lettuce, onion, lime, avocado, and cilantro.
