Ingredients
3 eggs (large)
1 cup milk
2 medium-sized sweet potatoes
2 1/2 tbsp brown sugar 3 tbsp melted butter
1 1/4 cups baking flour 1 1/2 tsp ground cinnamon
1/2 tsp ground nutmeg 1/2 tsp salt 1 tbsp baking powder
1/2 cup chopped walnuts
2 tsp vanilla extract cooking spray/ butter Maple syrup
Directions
Boil the sweet potatoes until they are tender, and mash them into a smooth purée. Mix the wet ingredients (eggs, sweet potato, milk, butter, and vanilla) with a spatula Add the dry ingredients (flour, sugar, baking powder, cinnamon, nutmeg, walnuts, and salt). Mix everything thoroughly until the batter is smooth. Preheat a skillet over medium heat and grease it with cooking spray or butter.
Add about ¼ – cup scoops of batter to the skillet for a single pancake, and cook for about 2-3 minutes on each side until they turn golden brown. Repeat this process until the batter is finished. Serve pancakes with maple syrup.
