As the weather changes and temperature begins to rise, so do our taste buds crave an assortment of refreshing fruits. Watermelon is tasty on its own, but when combined with Feta cheese makes a scrumptious salad.
This Mediterranean salad is tasty and can easily be prepared as a side dish with your favourite meal. The combination of sweet and sour ingredients is rich and flavourful, and bursting with subtle flavours of salty crumbled feta cheese, blends of fresh mint, and other delicious savoury ingredients.
Additionally, as an option, you can get creative with the watermelon feta salad, by adding cucumber, extra virgin olive oil, basil (which can be substituted for mint), kosher salt, and red wine vinegar or balsamic vinegar.
Watermelon Feta Salad
Ingredients
190g watermelon
¼ bunch of mint and or (fresh basil leaves)
80g feta crumbled cheese
½ red onion
Optional ingredients:
½ medium cucumber
½ tbs extra virgin olive oil
1 ½ tbsp red wine vinegar or 1 tbsp balsamic vinegar
½ tbs kosher salt
Instructions
- Scoop out the watermelon from its thick outer layer and chop into small to medium cubes (remove as many seeds as possible).
- Peel and slice the red onion into thin slices.
- Wash and shake off excess water from the mint or basil. Pick leaves off the stems, thinly slice a few and save for garnish.
- Combine watermelon cubes, feta cheese, red onion slices and mint leaves into a bowl. Sprinkle the thinly sliced mint or basil over the mixture.
- Place into the refrigerator and serve chilled.
Adding cucumber to the chilled Watermelon Feta Salad (optional)
- Peel and remove seeds from the cucumber, cut into cubes and add to the salad.
- Cut basil leaves into thin slices and add to the mixture.
- In a small bowl, mix kosher salt, vinegar and olive oil and sprinkle over the salad.
