It’s amazing how you can experiment with food using existing recipes. This apple cinnamon scone recipe is a perfect example. It’s like a mini apple pie with a twist, apple tart or a sweet, rich, buttery biscuit filled with bits of apple and spices, topped off with a delicious glaze made of apple butter and cinnamon. Yum!
Ingredients
- Fresh apples (1¼ cup, remove the core and skin)
- Cinnamon (2 tsp, grounded)
- Whipping cream (heavy, 1 cup)
- Brown sugar – (preferably)/granulated (3/4 cup)
- All-purpose flour (3 cups -sifted)
- Salt (1 tsp)
- Baking powder (2tsp)
- Butter (unsalted, 2/3 cup -frozen stick)
- Milk (4 tbsp)
- Egg (1 large egg, beaten)
- Vanilla extract (2½ tsp)
- Apple butter (3 tbsp)
- Icing sugar (1/2 cup)
Instructions
- Gather all dry ingredients in a medium bowl, mix flour, baking powder, sugar, salt,1 tsp cinnamon, and apples. Leave remaining cinnamon for apple butter cinnamon sauce.
- Add diced frozen butter and fold in lightly. Be careful not to apply too much pressure when folding in frozen butter chunks with a spatula.
- Gradually start adding wet ingredients; eggs, whipping cream, and 1½ tsp vanilla. Leave remaining vanilla for sauce glaze.
- Use a scooper, such as an ice cream scooper, spoon or floured hands and scoop a small amount to place on a baking sheet. (space out evenly)
- Preheat oven, and bake for 18½ to 21 minutes.
- To make apple butter cinnamon sauce; mix milk, apple butter, icing sugar, and remaining cinnamon and vanilla for the sauce glaze.
- Allow the scones to cool, then cover them with the sauce glaze. Enjoy!
