INGREDIENTS
Marinade
3 tbsp tomato sauce
1 tbsp peanut oil
3 tbsp soy sauce
2 cloves garlic, minced
Pinch of ground black pepper
Pinch of ground cumin
3 skinless, boneless chicken breasts, cubed
Peanut Sauce
1 tbsp vegetable oil
¼ cup minced onion
1 clove garlic, minced
1 cup water
½ cup chunky peanut butter
2 tbsp soy sauce
2 tbsp white sugar
1 tbsp lemon juice
A pack of 8-inch bamboo skewers
INSTRUCTIONS
- Combine soy sauce, tomato sauce, peanut oil, garlic, black pepper, and cumin in a bowl.
- Add chicken cubes to the marinade and coat well.
- Cover and leave the bowl in the refrigerator for 15 minutes to 2 hours
- Once marinated for a sufficient amount of time, skewer the meat onto the bamboo skewers while making sure to remove excess marinade.
- Preheat and oil the grill. Cook the skewered meat for five minutes on each side until done
- For the peanut sauce, heat oil in a saucepan on medium heat. Sauté onion and garlic until lightly golden. Add water, peanut butter, soy sauce, and sugar and stir to combine. Turn off the flame and let it cool down before mixing in the lemon juice.
- Serve the chicken skewers with the peanut sauce.
