Ingredients
Gravy:
- ⅓ cup flour
- salt and freshly ground black pepper to taste.
- 1 pinch cayenne pepper
- 3 tablespoons unsalted butter
- ½ pound chicken thighs, skinless and deboned (chop into cubes)
- 1 onion
- ½ teaspoon fresh thyme leaves
- 6 cups chicken broth
- 2 celeries, diced.
- 1 large carrot, diced.
Dumplings:
- ½ teaspoon kosher salt, or to taste
- 1 pinch freshly ground black pepper.
- ½ cup farmer’s cheese
- 1 large egg
- ⅓ cup self-rising flour
- 1 pinch cayenne pepper
- 1 ¼ teaspoons minced fresh rosemary.
Directions
- Start by melting butter in a high saucepan covered, put the heat on medium-high. Next you cook the chicken thighs until lightly browned. Throw in the onion and stir until is done, ensure to season with salt, pepper, and cayenne. Then mix in the flour and stir until well mixed with desired consistency.
- Next pour in the broth and add carrots and celery and bring gravy to a simmer on medium-low heat. Add the fresh thyme leaves and reduce the heat to cook until the gravy thickens.
- For the dumplings, mix the egg, rosemary, salt, and farmer’s cheese, and pepper in a bowl. Mix with a spoon until smooth, then add the self-rising flour and mix again until it forms a very stiff batter.
- Increase the heat to medium and allow the gravy to continue to simmer.
- Mold dumplings into desired shape and drop into the gravy one at a time. Now add in the cayenne pepper and cover the lid.
- Reduce heat and allow the dumplings to steam until cooked—(You’ll know this when they’re puffed up).
Enjoy your delicious cheese dumplings!
