Ingredients
6 eggs
2 ¼ cups grated mozzarella
5-6 cups chopped asparagus stalks (cooked)
2 cups chopped spinach leaves
1 clove minced garlic
2 tbsp parmesan cheese
Salt and pepper to taste
Instructions
- Preheat the oven to 350°F.
- In a large bowl, beat the eggs. Add salt and pepper.
- Add 2 cups of the grated mozzarella to the eggs and stir to combine.
- Add the asparagus stalks and chopped spinach to the egg and cheese mixture and stir to combine. Finally, add the clove of minced garlic.
- Spray a 9-inch round pie plate with non-stick spray, pour in mixture.
- In a separate bowl, stir together ¼ cup mozzarella and parmesan cheese, sprinkle over the mixture.
- Bake for 30 mins until the sides are golden brown.
