Crustless Spinach Asparagus Quiche

Easy, delicious, and full of protein, this spinach asparagus quiche is the perfect food to start your day. The best part is, this quiche doesn’t have a crust, so if you’re short on time or lack confidence in your ability to handle pastry, you don’t have to worry about that here. Pair it with ketchup or salsa roja and enjoy!


6 eggs 

2 ¼ cups grated mozzarella 

5-6 cups chopped asparagus stalks (cooked) 

2 cups chopped spinach leaves 

1 clove minced garlic 

2 tbsp parmesan cheese 

Salt and pepper to taste 


  1. Preheat the oven to 350°F.
  1. In a large bowl, beat the eggs. Add salt and pepper. 
  1. Add 2 cups of the grated mozzarella to the eggs and stir to combine. 
  1. Add the asparagus stalks and chopped spinach to the egg and cheese mixture and stir to combine. Finally, add the clove of minced garlic.
  1. Spray a 9-inch round pie plate with non-stick spray, pour in mixture. 
  1. In a separate bowl, stir together ¼ cup mozzarella and parmesan cheese, sprinkle over the mixture. 
  1. Bake for 30 mins until the sides are golden brown.
