Thai coconut soup, also known as tom kha in Thai, is flavourful and zesty, perfect for awakening your taste buds from winter hibernation. The classic Thai soup will tingle your taste buds, thanks to its flavourful ingredients like coconut milk, ginger, lemongrass, galangal root, and vegetables

INGREDIENTS
4 cups of vegetable stock
½ a yellow onion or 1 bunch of scallions
Thinly sliced 1½ inch fresh ginger
Peeled and minced 1 stalk lemongrass (with upper and outer leaves trimmed)
2 small hot peppers
Thinly sliced 1 can coconut milk
1 tbsp chili paste
1 tbsp red curry paste
2 tbsp tamari
2 cups of cooked tofu or green bell peppers
Cilantro (freshly chopped)
1 lime (juiced)
Salt to taste.
INSTRUCTIONS
- Put the vegetable soup in a pot with the onions, ginger, lemongrass, and sliced hot peppers.
- Simmer over medium to low heat for about 15 minutes.
- Add the coconut milk, pastes, tamari, and tofu or bell peppers.
- Allow the soup to simmer for 15 minutes for the flavours to mix.
- Add the lime juice, cilantro, and salt to taste.
- Remove the lemongrass before serving
